Chandler Macleod are seeking a highly skilled and motivated Sous Chef
with 7–10 years of culinary experience to join our airline catering production client. The ideal candidate will bring a passion for food, strong leadership, and a proven track record in high-volume production environments. This role is responsible for supervising kitchen operations, maintaining quality standards, and ensuring food safety compliance for airline meal production.
Key Responsibilities:
- Support the Executive Chef in day-to-day operations of culinary production for airline meals (both domestic and international flights)
- Lead and supervise kitchen staff, ensuring efficient workflow and team performance
- Oversee food preparation, cooking, and presentation according to airline specifications and SOPs
- Ensure strict compliance with hygiene, HACCP, and food safety regulations
- Manage production schedules to meet tight deadlines and flight dispatch times
- Collaborate with menu planning, recipe development, and seasonal updates in alignment with airline partners
- Monitor food and labor costs, minimizing waste and maximizing productivity
- Conduct regular training and performance evaluations for kitchen team members
- Liaise with procurement and logistics teams to ensure timely supply of ingredients and kitchen resources
- Maintain detailed documentation for quality audits and airline client inspections
- 7–10 years of progressive experience in culinary roles, with at least 2–3 years in a supervisory or sous chef position
- Prior experience in airline catering, institutional cooking, or large-scale food production preferred
- Culinary degree or relevant professional training
- Strong knowledge of international cuisines and dietary requirements (e.g., vegetarian, halal, gluten-free)
- Excellent organizational and leadership skills
- Familiarity with airline catering software, production systems, or ERP tools is a plus
- Flexibility to work shifts, weekends, and holidays as per flight schedules
- Strong understanding of food safety standards including HACCP, ISO, or similar certifications
- Must be available to work over a seven day a week rotating roster. This could mean day, afternoon or night shifts.
