Chandler Macleod are seeking Airline Production Asian Chefs to produce authentic Asian cuisine for in-flight meals. This role ensures that all dishes meet the airline’s standards for quality, taste, hygiene, and presentation. The chef will work closely with the Executive Chef to create regionally appropriate dishes for both economy and premium cabin passengers.
Key Responsibilities:
- Prepare and cook a variety of Asian dishes (e.g., Chinese, Japanese, Korean, Thai, Indian) in large-scale production settings.
- Ensure all food is prepared according to airline specifications, portion control, and presentation standards.
- Collaborate with menu planners and culinary teams to develop authentic and innovative Asian meal offerings.
- Maintain consistency in taste, quality, and appearance of meals across all batches.
- Supervise and train kitchen staff involved in Asian meal preparation.
- Ensure compliance with food safety, hygiene, and sanitation regulations (HACCP, airline-specific protocols).
- Monitor kitchen inventory and coordinate with procurement for sourcing authentic Asian ingredients.
- Adapt recipes and techniques for mass production while preserving authentic flavors.
- Support quality control processes, including taste panels and client presentations.
- Stay updated with Asian culinary trends and integrate them into menu planning.
- Cert III or IV in Commercial Cookery/Trade Qualified in Australia
- Minimum 5 years of experience in Asian cuisine
- In-depth knowledge of traditional and modern Asian using a wok.
- Experience in batch cooking, cold and hot meal preparation, and plated meal assembly.
- Understanding of airline catering operations and food safety regulations.
- Ability to work in a fast-paced, production-driven kitchen environment.
- Strong attention to detail, time management, and communication skills.
- Flexibility to work shifts, including weekends and holidays.
Preferred Skills:
- Multilingual (e.g., Mandarin, Thai, Hindi, or Japanese) a plus.
- Experience with airline menu development or international catering.
- Familiarity with Halal, vegetarian, and special dietary requirements.
